| Quick Smoked Tuna Slices Sandwich |

Makes 2 servings

(120 g/4.2 oz) Smoked Light Tuna Slices packed in water, drained |
| 2 Tbsp. | light mayonnaise |
| 1 tsp. |
mustard |
| 1 tsp. |
prepared horseradish |
| 1 tsp. |
lemon juice |

salt & pepper to taste |

French baguette, cut in half lengthwise, toasted |
| 1 cup |
shredded lettuce |
| ½ |
yellow bell pepper, julienne |
- Mix together the light mayonnaise, mustard, prepared horseradish and
lemon juice. Season with salt and pepper, to taste.
- Spread the mixture over bottom slice of the toasted French baguette and add
the lettuce.
- Top with tuna slices and garnish with bell pepper strips. Cover with the
other slice of the toasted French bread.
- Cut into equal portions and serve with tomatoes on the side.
