Rice and Veggies Salad with Spicy Thai Sweet Chili Tuna
Serves 2 as a main dish

The Thai flavoured tuna brings new dimension and spice to this easy to make salad.

2 cans
(85 g each) Gold Seal® Spicy Thai Sweet Chili Tuna Snacks
3/4 cupcooked rice
4 Tbsp. olive oil
3 Tbsp. lemon juice
1 tomato, diced
1/4 medium red onion, thinly sliced
1/4 cup green pepper, cut into small dice
1/4 cup finely chopped & seeded zucchini
1/8 cup chopped fresh oregano or parsley
to taste salt and pepper

  1. Place the cooked rice in a salad bowl. While still warm toss with the olive oil and lemon juice.
  2. Add tuna with juices to the rice with all the vegetables and herbs. Toss gently.
  3. Let sit for 30 minutes for the flavours to blend.
