| Simple Wild Salmon Stir-fry |

It’s a myth that fish is difficult to cook! Here’s a quick and
easy recipe to prove that great food can take only minutes to prepare.
Makes 2 servings (ready in 10 minutes)

175g (6 oz) fillets of fresh wild Alaska salmon |
| 3 Tbsp. |
hoisin sauce |
| 1 Tbsp. |
sweet chilli sauce |
| 2 Tbsp. |
stir-fry oil |
| 300 g |
bag of fresh or frozen ready-prepared stir-fry vegetables |
- Simply cut 2 x 175 g (6 oz) fillets of wild Alaska salmon into 2 cm (1
inch) chunks.
- Put the salmon chunks into a bowl with 3 tablespoons of hoisin sauce and
1 tablespoon of sweet chilli sauce. Stir to coat and set aside.
- Heat 2 tablespoons of stir-fry oil (cooking oil flavoured with garlic, ginger,
sesame and spices) in a wok or large frying pan and add a 300g bag of fresh
or frozen ready-prepared stir-fry vegetables.
- Cook for a couple of minutes, then add the salmon and mixture. Stir-fry briskly
for 2 - 3 minutes until the salmon is cooked, yet the vegetables remain crunchy.
Serve immediately.
